125g/+5oz Dried Apricots
450g/1lb uncooked Couscous
1 tbsp Olive Oil
2 tbsp roughly chopped Coriander
100g/4oz Spring Onions, chopped
1. Place the chopped apricots in a bowl, cover with boiling water
and leave to soak for 10 minutes.
2. Meanwhile, place the couscous in a large bowl and add enough
boiling water to cover by 6mm/1/4 inch. Cover tightly with clingfilm
and allow to stand for 10 minutes until cooked.
3. Drain the apricots well and add to the couscous, fluffing it
up with a fork. Add the remaining ingredients. Mix well and
